Panini can be made with a number of creative and innovative ideas. It’s a quick and healthy meal that’ll fill you up. You can make the panini using the panini press, sandwich press or even stove top.
I always made chicken paninis and my kids love them. If I was making veg paninis, I just used mushrooms and peppers as the main ingredients. But, the veg panini never tasted fulfilling. So, I tried using roasted eggplant for the meaty texture and served it to my friends. It was an instant hit. Now, they became more famous than the chicken ones.

Panini : 2 minutes
Makes : 4 paninis
Bread : 8 slices large
Eggplant : 1 medium sliced
Mushrooms : 100 grams sliced
Green and red peppers : 2 large sliced
Onions : 1 medium sliced
Tomatoes : 2 medium sliced
Paprika : 1 tablespoon
Cumin powder : 1 teaspoon
Coriander powder : 1 teaspoon
Ground black pepper : 1 teaspoon
Salt to taste
Heat oil in a pan and place the eggplant slices single layer and add paprika, cumin powder, coriander powder, black pepper and salt. Cook for 2 minutes, turn and season them again. cook for another 2 minutes. Transfer them into a bowl and Keep them to a side.
In the same pan add mushrooms, peppers and and sauce with the spices for 2 minutes.
Take 2 bread pieces, smear chipotle sauce on one slice and mayonnaise on the other slice, add eggplant, mushrooms, peppers, onions, tomato, cheese slice and top it with the slice with mayonnaise on it.
Get the panini maker ready to the following the manufacturers instructions. Grease the plates and place the bread slices in the panini maker, close and lock it as the cheese needs to melt. Cook until it’s golden brown.
Slice the panini in half and serve immediately with some chips or fries and sauce of your choice.
