Glazed Carrots

These glazed carrots are made with simple ingredients like brown sugar and butter.  which makes these carrots really flavourful with a beautiful glaze.It serves as a delicious side dish for any meal during holidays.

I served these delicious carrots with the Thanksgiving meal and everyone loved it. You can use baby carrots or spring carrots for this dish. I couldn’t find neither so used regular carrots and sliced them.

Preparation Time : 10 minutes

Cook Time: 15 minutes

Serves : 4-6

Ingredients:

Carrots : 450 grams

Butter :  3 tablespoons

Brown sugar : 1/2 cup packed

Chicken or vegetable broth : 1/2 cup

Salt and pepper to taste

Dry rosemary : 1/4 teaspoon

Fresh mint : 1 teaspoon chopped

Method:

Wash and slice the carrots.

Melt butter in a heavy bottomed pan over medium heat. Add carrots and cook for 3 minutes stirring occasionally.

Add the stock and sugar and stir. Cover the pan and reduce heat to low. Cook for another 5 minutes or until the carrots are tender.

Remove the carrots of the pan and keep them aside.

Cover the pan and continue cooking until the mixture is syrup consistency.

Add the carrots back to the pan along with the spices and stir carefully. Turn off the stove  and serve as a side dish with any meal.

Creamy Scalloped Potatoes

These Creamy Scalloped Potatoes are super creamy and baked to perfection. It goes well with an meal as a side dish.

Preparation Time: 10 minutes

Cook Time : 10 minutes

Bake Time : 45 minutes

Serves : 2-3

Ingredients:

Potatoes : 4 large peeled and sliced into 3mm thick slices

Butter : 1 tablespoon

Garlic : 2 cloves minced

All purpose flour : 1 cup

Ground pepper: 1 teaspoon

Salt : 1 teaspoon

Grated parmesan cheese : 2 tablespoons

Instructions:

Preheat the oven to 350 degrees F/ 180 degrees C

In a oven safe dish, fan the sliced potatoes.

In a small sauce pan, melt butter and cook garlic until it starts to brown. Add the flour, salt, pepper and stir well to combine.

Slowly add the milk while stirring so no lumps are formed. Stir until the sauce is smooth and creamy. Bring it to a boil and turn off the stove.

Add the sauce on top of potatoes, sprinkle with parmesan cheese and bake for 45 minutes.

Let it rest for 5 minutes before serving. Serve hot as a side dish.

Simple Mexican Rice

This Mexican Rice is a simple side dish for any Mexican Dinner. It’s perfect for taco night too.

Preparation Time: 5 minutes

Cook Time : 25 minutes

Serves : 3-4

Ingredients:

Onion : 1 medium chopped

Tomato sauce : 1/2 cup

Long grain rice : 1 cup

Garlic salt : 1 teaspoon

Ground Cumin : 1 teaspoon

Salt to taste

Chicken broth : 2 cups

Oil : 3 tablespoons

Instructions:

Heat oil in a saucepan, add rice and fry till the rice is golden brown. Add salt, garlic salt, cumin. Stir to combine.

Add onions and cook till they are translucent. Add tomato sauce, chicken broth, stir and bring it to a boil.

Reduce heat, close lid and cook for another 15-20 minutes until the rice is completely cooked.

Turn off the stove and let it rest for 5 minutes. Fluff up with a fork before serving.

Garlic Bread

Garlic Bread is a delicious side dish that goes well with any Italian meals. When made with fresh Italian bread, it tastes even better.

Preparation Time: 5 minutes

Bake Time : 10 minutes

Serves : 4-6

Ingredients:

Italian Bread: 1 loaf

Butter : 1/3 cup melted

Garlic : 2 cloves minced

Dried Oregano : 1/2 teaspoon

Red chilli flakes : 1/2 teaspoon (Optional)

Salt : 1/4 teaspoon

Method:

Preheat the oven to 375 degrees F/175 degrees C.

Slice the bread loaf into 1/2 inch pieces.

Place them in a cookie tray.

In a small bowl, mix rest of the ingredients.

Brush the butter mixture on the bread slices and bake them for 10-12 minutes.

Serve immediately as a side dish.

Saggubiyyam Vadiyalu/ Sago papad

Saggubiyyam Vadiyalu are South Indian accompaniment that goes well with dal rice or sambar rice. Summer months are apt to make these vadiyalu as they should dry nicely in the sun to cook well when deep fried.

Preparation Time : 15 minutes

Cooking Time : 15 minutes

Drying time : 6-8 hours in hot sun

Makes: 50-60 vadiyalu

Ingredients:

Sago : 1 cup

Water : 5 cups

Dry red chillies : 3

Jeera/Cumin seeds : 1 teaspoon

Salt : 1 teaspoon

Instructions:

Wash and soak sago for 30-40 minutes. In a mortar, add red chillies, jeera and roughly smash them.

Heat water in a vessel and add soaked sago, red chilli paste, salt and bring it to a boil. Cook for 5 more minutes.

Let the mixture sit for 15 minutes before making the vadiyalu.

Take a plastic sheet or cotton fabric, take a spoonful of mixture and drop it.

Let the vadiyalu dry in the hot sun until they turn transparent.

Store in a airtight container.

When ready to serve, heat oil for deep frying and fry the vadiyalu.

Mango Salsa

Mango Salsa is a refreshing side dish that has a burst of sweet, spicy and sour flavours. It’s serves as a perfect side dish with any Mexican meal or seafood dishes.

Jalapeno is normally used in this dish but I used green chilli as I couldn’t find jalapeno’s.

Preparation Time: 10 minutes

Serves : 2-4

Ingredients:

Ripe Mango : 1 cut into small pieces

Cilantro/coriander leaves: 2 teaspoons chopped

Onion : 1 small chopped finely

Jalapeno : 1 chopped finely

Lemon juice : 1 teaspoon

Instructions:

In a bowl, add ingredients and mix to combine.

This salsa can be refrigerated for a day. Fresh salsa tastes the best.

This Cucumber Tomato Salad is a simple and refreshing salad that goes perfect with any meal.

Ingredients :

Cucumber : 2 large peeled and diced

Roma Tomatoes : 2 large diced

Onion : 1 sliced thinly

Extra virgin olive oil : 1 tablespoon

Dried Oregano : 1/2 teaspoon

Seasoning salt : 1/2 teaspoon

Ground black pepper : 1/2 teaspoon

Instructions:

Add ingredients to a medium sized bowl and toss well to coat.

Serve immediately.

Shorba/Shorva is a simple gravy dish that goes good with any biryani or pulao.The preparation and cooking this dish is very easy. This dish is sure for gravy lovers. If you like lots of gravy to go with your biryani, then this one is for you.


Preparation Time: 10 minutes

Cook Time: 25 minutes

Serves : 4-5


Ingredients:
Onion : 2 medium chopped finely

Ginger garlic paste: 1 tablespoon

Kasoori Methi: 1/4 teaspoon crushed

Garam masala: 1 tablespoon

Coriander powder: 1 1/2 tablespoons

Red chili powder: 2 1/2 teaspoons

Turmeric: 1/2 teaspoon

Curd/yogurt : 3 teaspoons

Cilantro/Coriander leaves: 1/4 cup chopped

Oil : 5 tablespoons


Method:
Heat oil in a pan add onion and kasoori methi, sauté for 1 minute. Add garam masala and ginger garlic paste and fry for 2 minutes.

Add turmeric, salt, coriander powder and chilli powder. Fry for 1 minute.

Add curd and cook for 5-7 minutes. Close lid and cook for 3-5 minutes.

Add 1 1/2 cups of water, mix well and cook for 10 minutes until the gravy is a little thick.

Add coriander leaves and turn off the stove.Serve hot with biryani or pulao.

Roasted peppers is a side dish that is colourful, flavourful and it goes with a lot of Vegetarian and Meat main courses. This is such a simple dish to make.

Preparation Time : 5 minutes

Cook Time : 10 minutes

Serves : 2-3

Ingredients:

Red bell pepper : 1 large seeded and diced

Yellow bell pepper : 1 medium seeded and diced

Green bell pepper : 1 large seeded and diced

Spices:

Italian seasoning : 1 teaspoon

Red pepper flakes : 1/2 teaspoon

Parsley : 1/4 teaspoon

Fresh ground black pepper : 1/4 teaspoon

Salt to taste

Method:

Heat 2 teaspoons of olive oil in a pan, add all the peppers and saute for 1 minute.

Add all the ingredients listed under spices, mix well to coat and saute for 5-6 minutes on medium flame. Do not let the peppers loose their crispness.

Turn off the stove and serve with any main course.

Spanakopita (Greek Spinach Pie)

Spanakopita is a famous Greek Pie. It’s flaky on the top with a delicious spinach, feta cheese filling. Pastry sheet gives a nice crispness to the dish. This can be served as a side dish with meat or a main dish with some salad.

I called a friend when I chose to do Greek dishes as she always made her family Greek dishes for potlucks. She shared me this delicious recipe.

Simply replace egg with flax meal to make this a vegetarian dish. (1 tablespoon flax meal and 3tablespoons water for each egg)

Sending this recipe to our BM #109, week 3 day 2 under Countries by Alphabet where I’m doing Greek dishes.

Preparation Time: 2o minutes

Cook Time : 1 hour

Makes : 6 pieces

Ingredients:

For the Crust:

Puff Pastry sheet : 1 package thawed

Extra virgin Olive oil : 1/2 cup

For Filling:

Baby Spinach : 2 cups

Parsley : 1 cup finely chopped

Onion : 1 large finely chopped

Garlic : 2 cloves minced

Extra virgin olive oil : 1 tablespoon

Eggs : 3

Feta Cheese: 1 1/4 cups crumbled

Salt and pepper to taste

Method:

Preheat the oven to 325 degrees F.

In a large bowl, add all the ingredients listed under for filling and mix well to combine.

Unroll the pastry sheet, roll it a little. Line a baking pan with parchment paper and place the pastry sheet in the pan, apply olive oil generously, evenly spread the filling over the sheet. fold rest of the sheet and cover the filling.

Gently press the sheet to close the edges. Bake for 1 hour or until the crust is golden. Let it rest for 5 minutes before cutting.

Serve immediately. The left overs can be refrigerated for 2-3 days.
