Veggie Noodle Salad

Zoodles is very famous where zucchini is made into noodles. Why just zucchini and leave other veggies so, I went and made noodle salad using a lot of vegetables. The color and texture was just amazing.

Preparation Time: 15 minutes

Serves : 3-4

Ingredients:

Zucchini : 2

Yellow squash : 1

Beetroot : 2 medium

Carrot : 1 large

Cabbage : 1/2 cup sliced thinly

Bell peppers : 1 cup julienned (red, yellow and green)

Lemon juice: 2 tablespoons

Salt and Pepper

Instructions:

Using a zoodle maker, make noodles of zucchini, squash, beetroot and carrot.

Add the veggie noodles, cabbage, bell peppers, lemon juice, salt and pepper in a bowl and toss well to coat. Let the salad rest for 15 minutes in the refrigerator so the flavors are soaked in.

Serve chilled.

Chickpea Salsa Salad

This Chickpea Salsa salad is a simple yet refreshing salad made with chickpeas, spicy salsa and pomegranates. You can either make everything from scratch or just use the canned chickpeas and readymade salsa. I made everything and mixed them up.

Preparation Time : 10 minutes

Serves : 2

Ingredients :

Canned or soaked and boiled chickpeas : 1 1/2 cups

Salsa : 1/2 cup

Pomegranate seeds : 1/2 cup

Salt : 1/2 teaspoon

Fresh ground pepper : 1/4 teaspoon

Instructions:

In a medium size bowl, mix all the ingredients and refrigerate for 30 minutes. Serve as a side dish or as a main dish with some soup

Peri Peri Chicken Salad

Peri Peri seasoning is a beautiful blend of spices. Chicken in this dish is cooked with just the seasoning. No need to marinate the chicken. It’s a quick and easy dish that can be served as a side or main.

Preparation Time : 5 minutes

Cook Time : 10 minutes

Serves : 4

Ingredients:

Boneless/skinless chicken : 450 grams cubed

Peri Peri Seasoning : 2 tablespoons

For Salad:

Lettuce : 1 medium head washed and chopped

Tomatoes : 3 diced (de seed)

Onion : 1 small sliced

Olives : 2 tablespoons

Extra virgin olive oil : 1 tablespoon

Instructions:

Heat 2 tablespoons of olive oil in a pan, add the chicken and cook until it’s no more pink. It should take about 5-6 minutes.

Add the Peri Peri Seasoning, stir to combine and cook for 4-5 minutes. Turn off the stove.

In a large bowl, add all ingredients listed under salad, toss well and add the cooked chicken on top.

Serve immediately.

Indian-Spiced Chicken Salad

Indian Spices has a lot of flavour. Chicken marinated with these spices and seared in a pan makes the chicken flavourful and tender. This chicken is served with a lettuce and tomato based salad. The crunchy salad goes well with the spicy chicken.

Preparation Time: 10 minutes

Cook Time : 10-12 minutes

Serves : 4

Ingredients:

For Marination:

Boneless/ Skinless Chicken : 500 grams cubed (breast or thighs)

Red chilli powder : 2 teaspoons

Chicken masala : 1 teaspoon

Lemon juice : 1 teaspoon

Coriander powder : 1/2 teaspoon

Cilantro : 1/2 chopped finely

Salt to taste

Salad :

Lettuce : 1 medium head washed and chopped

Tomatoes : 3 diced (de seed)

Onion : 1 small sliced

Olives : 2 tablespoons

Extra virgin olive oil : 1 tablespoon

Instructions:

In a medium size bowl, add all the ingredients listed under for marination, mix well and rest for 15 minutes.

In the meantime, Take a large salad bowl, add all the ingredients listed under salad and toss.

Heat 2 teaspoons of oil and add the marinated chicken and saute them for 10-12 minutes on medium flame.

Wait for 2 minutes and add the chicken to the salad, toss well and serve immediately.

Note: 

If you add the chicken right of the pan, it’ll make the salad soggy. So, wait for 2 minutes before adding. Add the chicken juices to the salad as well.

Roasted Peppers

Roasted peppers is a side dish that is colourful, flavourful and it goes with a lot of Vegetarian and Meat main courses. This is such a simple dish to make.

Preparation Time : 5 minutes

Cook Time : 10 minutes

Serves : 2-3

Ingredients:

Red bell pepper : 1 large seeded and diced

Yellow bell pepper : 1 medium seeded and diced

Green bell pepper : 1 large seeded and diced

Spices:

Italian seasoning : 1 teaspoon

Red pepper flakes : 1/2 teaspoon

Parsley : 1/4 teaspoon

Fresh ground black pepper : 1/4 teaspoon

Salt to taste

Method:

Heat 2 teaspoons of olive oil in a pan, add all the peppers and saute for 1 minute.

Add all the ingredients listed under spices, mix well to coat and saute for 5-6 minutes on medium flame. Do not let the peppers loose their crispness.

Turn off the stove and serve with any main course.

Paneer Salad

This Paneer Salad is a simple salad. Just a handful of fresh vegetables and pan fried marinated paneer. The salad is a refreshing and the spicy paneer adds a little kick to the salad.

Preparation Time : 10 minutes

Cook Time : 5 minutes

Serves : 2-3

Ingredients:

Romaine Lettuce : 2 cups washed and chopped

Cucumber : 1 diced

Tomatoes : 2 medium diced

Onion : 1 medium sliced

Salt to taste

To marinade:

Paneer: 250 grams

Ginger garlic paste : 2 teaspoons

Yogurt : 1/4 cup

Red chilli powder : 1 teaspoon

Garam Masala : 1/2 teaspoon

Salt to taste

Method :

In a medium sized bowl, add all the ingredients listed under for marinade and toss well to coat.

In an another medium sized bowl, add all the veggies, salt and toss well.

Heat oil in a pan and fry the the marinated paneer for 5 minutes tossing them.

Add paneer to the salad and serve with any salad dressing of your choice.

Simple Greek Salad

Traditional Greek salads are simple with few ingredients, super fresh and delicious. This salad is the one that’s made with ripe tomatoes, cucumbers, bell peppers, onions and creamy feta cheese. No special dressing is needed for this salad, some extra virgin olive oil and red wine vinegar does the magic.

Greek Zucchini Salad

Spanakopita (Greek Spinach Pie)

Preparation Time:10 minutes

Serves : 2-3

Ingredients:

Ripe juicy Tomatoes : 4 medium diced

Cucumber : 1 large or 4 small diced

Bell peppers: 1sliced

Red onion : 1 medium diced

Black olives : 1/4 cup

Green olives : 1/4 cup

Extra virgin olive oil : 3 tablespoons

Red wine vinegar : 1 tablespoon

Dry oregano : 1/2 tablespoon

Feta cheese : 100 grams do not crumble

Salt and pepper to taste

Method:

Add all ingredients except Feta cheese into a large bowl and toss well to combine.

Once the salad is transferred to a salad bowl, add the Feta cheese blocks on the top and season with fresh ground pepper.

Serve immediately.

Creamy Italian Dressing

This creamy Italian salad dressing is creamy and packed with lots of herbs. The combination of ingredients makes the dressing a flavourful one and a great addition to any salad.

Preparation Time: 10 minutes

Makes : 1 cup of dressing

Ingredients:

White wine vinegar : 1/8 cup

Lemon Juice: 1 tablespoon

Olive oil : 1/3 cup

Mayonnaise : 1/2 cup

Garlic : 2 cloves minced

Dried Oregano : 1/2 teaspoon

Dried basil : 1/2 teaspoon

Dried Parsley : 1/2 teaspoon

Dried thyme: 1/2 teaspoon

Honey : 2 teaspoons

Parmesan cheese : 1/8 cup grated

Salt and fresh ground pepper to taste

Method:

Take all ingredients listed in a medium sized bowl and whisk well to make a creamy dressing.

Serve with your favourite salad. Refrigerate the left over dressing for 4-5 days.

This Zucchini Salad is full of Greek flavours. It’s a raw and healthy salad that makes an awesome side dish with any meat.

Sending this recipe for our BM # 109, week 3 day 1 under Countries by Alphabet. I’m going to do 3 Greek dishes this week.

Preparation Time: 15 minutes

Serves : 3-4

Ingredients:

Zucchini : 1 large diced (3 cups)

Chickpeas : 1 1/2 cups (soaked or canned)

Cilantro : 1/2 cup chopped

Olives :  1/3 cup

Red onion : 1 medium sliced

Feta cheese : 1 cup crumbled

Lemon juice: 2 tablespoons

Extra virgin olive oil : 1/4 cup

Salt and pepper to taste

Method:

Mix all listed ingredients in a medium sized bowl and toss well to coat. Let it rest in the refrigerator for at least 15 minutes.

Serve chilled as a side dish with your choice of main dish.

Caprese Salad

Caprese salad is a simple Italian salad made with fresh Mozzarella cheese, tomatoes, Italian basil and seasoning. It’s a refreshing salad that can be served as a starter. You can use either mozzarella balls or diced/sliced mozzarella.

Preparation Time: 5 minutes

Rest Time : At least 15 minutes

Serves : 2

Ingredients:

Fresh Mozzarella : 250 grams diced

Cherry tomatoes : 200 grams halved

Italian basil : 8-10 leaves chopped

Fresh ground black pepper : 1/2 teaspoon

Red pepper flakes : 3/4 teaspoon

Oregano : 1/2 teaspoon

Extra virgin olive oil : 3 tablespoons

Salt to taste

Method:

Take a medium sized bowl, add all the ingredients and toss to combine.

Let it rest for 15 minutes and serve.
