Buttery Garlic Pasta

Buttery Garlic Pasta is a super simple make but will become kids favourite. As the name says, cooked pasta is mixed with melted salted butter, minced garlic and Italian seasoning. You can use any pasta of your choice but I used penne pasta.

I sautéed mushrooms in butter with some Italian seasoning and added it to the pasta which is optional. It does add a nice flavour and texture to the pasta.

Preparation Time : 5 minutes

Cook Time : 10-12 minutes

Serves : 2

Ingredients :

Penne pasta : 2 cups

Salted Butter : 2 tablespoons

Garlic : 3 cloves minced

Italian seasoning : 1 teaspoon

To saute mushrooms: (optional)

Butter: 1 tablespoon

Mushrooms : 1 cup diced

Italian seasoning : 1/2 teaspoon

Salt : 1/4 teaspoon

Method :

Boil 8 cups of water in a vessel, add pasta, little bit of salt and cook according to the package instructions. Drain the water, add some oil and keep the pasta aside.

In the meanwhile, heat butter in a pan, add mushrooms, salt, Italian seasoning and saute for 2-3 minutes.

Melt butter in a microwavable bowl, add minced garlic and stir.

Add butter mixture, mushrooms, Italian seasoning to the pasta and stir well to combine.

Serve as is or with some salad.

Roasted Red Pepper Pasta

This is a simple pasta tossed in flavourful roasted red pepper sauce which is creamy and delicious. Addition of protein is optional.

Preparation Time: 10 minutes

Cook Time : 15 minutes

Serves : 4

Ingredients:

Pasta : 2 cups

Red bell peppers: 2 large diced

Onion : 1 medium diced

Garlic cloves : 3 minced

Italian seasoning: 1 teaspoon

Red chilli flakes : 2 teaspoons (use less for a mild sauce)

Salt to taste

Fresh cream or milk : 3/4 cup

Instructions :

Cook the pasta according to the package instructions, drain it, add 1 teaspoon of olive oil and keep aside

Heat oil in a pan, add red peppers and roast them for 4 minutes. Add onions, garlic and sauté for 2 minutes.

Add salt, Italian seasoning, red chilli flakes, stir to combine and cook for 2 minutes. Turn off the stove and let it cool.

In a blender jar add the red pepper mixture and blend. Add cream or milk and blend till smooth.

Add sauce to the cooked pasta and toss well to coat. Serve with some protein as a main dish or as a side dish.

Chicken Alfredo pasta

This Chicken Alfredo Pasta is a simple yet creamy and delicious dish. Serve it with some garlic bread to make it a meal.

I always make some extra Alfredo sauce as my kids love to dip their garlic bread in the sauce. It tastes delicious.

Preparation Time: 15 minutes

Cook Time : 15 minutes

Serves : 5-6

Ingredients:

Chicken breast/thighs : 700 grams cubed

Butter : 2 tablespoons

Dried Oregano : 1/2 teaspoon

Dried basil : 1/2 teaspoon

Red chilli flakes : 1/2 teaspoon

Salt : 1/2 teaspoon

Ground pepper : 1/2 teaspoon

Pasta : 500 grams

Alfredo Sauce:

Butter : 2 tablespoons

Garlic : 5 cloves minced

All purpose flour : 2 tablespoons

Milk : 2 1/2 cups

Dried Oregano : 1/2 teaspoon

Dried basil : 1/2 teaspoon

Red chilli flakes : 1/2 teaspoon

Salt : 1/2 teaspoon

Ground black pepper : 1/2 teaspoon

Shredded parmesan cheese : 1/2 cup

Instructions:

In a large pot, bring water to boil, add pasta and cook according to package instructions. Drain, add some oil and keep aside.

In a pan, add butter and melt it. Add chicken and season will all the spices listed. Saute for 8-10 minutes until the chicken is fully cooked. Remove it from the pan and keep aside.

In the same pan, melt butter, add garlic and cook for 30 seconds.

Add 1 tablespoon of flour and stir to combine. Then add rest of the flour and stir well.

Add the milk little bit at a time, stir occasionally until the sauce beings to thicken.

Add all the spices and stir well to combine. Add parmesan cheese and stir until the cheese is melted and fully incorporated. Turn off the stove.

Take a pasta bowl, add cooked pasta, pour the sauce, add the cooked chicken and stir well to combine.

Serve hot with some garlic bread and/or salad.

Mexican style Chicken Pasta

This Pasta is as the name says is made with Mexican spices. It’s a pretty simple dish that’s perfect for weeknights.

Preparation Time : 10 minutes

Cook Time : 30 minutes

Serves : 4

Ingredients:

Spaghetti : 340 grams

Extra virgin olive oil : 1 tablespoon

Boneless Chicken : 450 grams diced

Salt and pepper to taste

Onion : 1 large sliced

Red bell pepper : 1 sliced

Green bell pepper : 1 sliced

Red chilli powder : 1 tablespoon

Dried Oregano : 2 teaspoons

Ground Cumin : 1 tablespoon

Tomato sauce : 1 1/2 cups

Chicken broth : 3/4 cup

Fresh cream : 1/2 cup

Cheddar cheese : 1 cup shredded

Instructions :

Boil the pasta in a large pot according to the package instructions. The pasta should be al dente. Drain the pasta, add some oil and keep aside.

Meanwhile, In a large pan, heat oil and add chicken, salt, pepper and cook for 10 minutes until the chicken is light brown.

Add onion, peppers and cook for 6-7 minutes, add tomato sauce, spices, chicken broth, fresh cream and cook for 3-4 minutes.

Add cheddar cheese, cooked pasta and toss well. Cook for 2 minutes.

Turn off the stove and serve immediately.

Veggie Spaghetti

This Veggie Spaghetti is a quick and easy pasta that tastes delicious with lots to sautéed veggies, mushrooms and home made creamy sauce. It’s a good way to feed kids all the veggies as this spaghetti is colourful.

You can swap spaghetti with your choice of pasta and add your choice of vegetables.

Preparation Time : 10 minutes

Cook Time : 15 minutes

Serves : 4 – 6

Ingredients :

Spaghetti : 12 oz /340 grams

Zucchini : 1 large diced

Red, yellow and green bell peppers : 1/2 cup each diced

Button mushrooms : 1 cup diced

Garlic : 3 cloves minced

Basil leaves : 7 roughly chopped

Fresh Tomato Marinara Sauce : 1/2 recipe blended till smooth

Extra virgin olive oil : 2 tablespoons

Italian seasoning : 2 teaspoons

Salt to taste

Method:

In a large pot, bring water to a boil by adding salt to it. Then cook pasta according to package instructions. Drain, add some extra virgin olive oil and keep aside.

Meanwhile, heat oil in a pan, add garlic, zucchini, bell peppers and saute for 2 minutes. Add mushrooms and saute for another 2 minutes on medium flame. Add salt, Italian seasoning, stir and cook for 1 more minute.

Take the cooked pasta in a large bowl, add rest of the extra virgin olive oil, marinara sauce and stir well to coat. Add the cooked veggies and stir. Add basil leaves and serve hot with some parmesan cheese as garnish.

Buffalo Chicken meatballs with Penne Pasta

Chicken Meatballs with pasta is a great combo. Adding buffalo sauce mixed in the meatballs and to toss the pasta makes it much more tastier. This is a super simple dish that’s perfect for a dinner.

I previously posted F – Fusilli pasta soup with meatballs and Spaghetti with chicken meatballs both dishes are chicken meatballs with pasta.

Preparation Time : 10 minutes

Cook Time : 20 minutes

Serves : 3-4

Ingredients:

Penne pasta : 4 cups

Extra virgin olive oil : 2 tablespoons

For Sauce:

Unsalted butter : 4 tablespoons

Hot sauce : 1/3 cup

Crumbled blue cheese or parmesan cheese : 1/4 cup

Salt : 1/2 teaspoon

For meatballs:

Ground Chicken : 450 grams

Panko breadcrumbs : 1/2 cup

Onion : 1 medium chopped finely

Garlic : 2 cloves minced

Egg : 1 large

Parsley : 1/2 cup chopped

Fresh ground black pepper : 1/2 teaspoon

Method :

In a small saucepan, add all the ingredients listed under for sauce and whisk until butter and cheese is melted and fully incorporated for about 2 minutes. Remove the saucepan from heat and let it cool.

In a mixing bowl, add all the ingredients listed under for meatballs, half of the hot sauce and mix to combine. Make meatballs of your desired size and keep aside.

In a large vessel, boil water, add pasta, salt and cook according to the package instructions. Once the pasta is al-dente, drain, add a little bit of oil and keep aside.

Heat 2 tablespoons of oil in a pan, add the meatballs with out crowding and fry them till golden brown on all sides. This should take about 10-12 minutes.

In a large bowl, add cooked pasta, remaining hot sauce, 1 table spoon of extra virgin olive oil and cooked meatballs. Toss well and serve immediately.

Fusilli pasta soup with meatballs has vegetables, fusilli and mini meatballs. This dish can be served as a meal in itself. It’s perfect for weekday dinners. It’s quick, easy and can be ready in less than 30 minutes.

For vegetarian option, meatballs can be replaced with toasted tofu.

Preparation Time: 10 minutes

Cook Time : 15 minutes

Serves : 2

Ingredients:

Fusilli : 1 1/2 cups

Onion : 1 large diced

Potato : 1 medium diced

Tomato : 2 medium diced

Carrot : 2 medium sliced

Garlic cloves : 3 cut in half

Micro greens : 2 tablespoons (optional)

Hot Water : 1 litre

Black pepper : 1 teaspoon

Italian seasoning : 1 teaspoon

Salt to taste

For meatballs:

Minced Chicken : 200 grams

Paprika : 1 teaspoon

Dry ginger powder : 1/2 teaspoon

Onion powder : 1/2 teaspoon

Panko breadcrumbs : 1 tablespoon

Salt to taste

Method:

Heat oil in a saucepan, add onion, garlic and saute for 1 minute.

Add carrots, potatoes, tomato, micro greens stir, close lid and cook for 5 minutes.

In the meantime, add all ingredients listed under for meatballs, mix them well and make small marble sized balls.

Heat 2 tablespoons of oil in a pan and fry these meatballs till golden brown on all sides and keep them aside.

To the veggies, add hot water, fusilli, black pepper, Italian seasoning, salt and stir. Cook for 10-11 minutes until the pasta is cooked al dente.

Turn off the stove, add meat balls, stir and serve immediately.

Spaghetti with chicken meatballs

Spaghetti with meatballs is a classic dish but this recipe is a little different than the norm. I used chicken meatballs and homemade chunky marinara sauce. Flavours from the sauce and juicy meatballs makes it a kids favourite. Kids loved the taste.

Preparation Time: 5 minutes

Cook Time : 15 minutes

Serves : 4

Ingredients:

Spaghetti : 1 pack

Marinara Sauce : 8 cups

Grated parmesan cheese : To garnish

Meatballs:

Minced chicken : 500 grams

Bread crumbs : 3/4 cup

Oregano : 1 teaspoon

Paprika : 1 teaspoon

Garlic cloves : 3 minced

Grated parmesan : 1/4 cup

Salt to taste

Method:

In a large bowl, mix together all the ingredients. Don’t over mix. Make 18-20 meatballs out of this mixture and set aside.

Heat two tablespoons of oil in a pan and add as many meatballs as they fit in the pan without overcrowding. On high heat, cook and brown the meatballs on all sides and remove them into a plate. Repeat the same process with rest of the meatballs.

Soak the meatballs in the marinara sauce for 10-15 minutes.

Cook spaghetti according to package instructions, drain and keep aside.

Take a large bowl, add the cooked pasta, marinara sauce with meatballs and mix until the pasta is coated.

Sweet Pasta

Pasta is one of kids favourite dish. We make pasta in so many variations and flavours but most of them are savoury. I wanted to make a pasta dessert so enquired a couple Italian friends if there is a recipe. One of them send me this wonderful creamy sweet pasta that was loved by kids when I tried.

Sending this dish over to Ritu who is hosting kids delight and also to our Blogging marathon #106, week 2, day 2.

Preparation time: 20 minutes

Cook time : 10 minutes

Serves : 6

Ingredients:

Pasta : 500 grams cooked al Dante and drained

Cream cheese : 225 grams

Whole milk : 2 cups warm

Unsalted butter : 3 tablespoons

Sugar : 1/2 cup

Vanilla extract : 1 teaspoon

Ground Cinnamon : 1/2 teaspoon

Nutmeg : 1/2 teaspoon

Method:

Add butter in a sauce pan and melt over low heat. add the cream cheese and stir until a smooth consistency.

Add milk and whisk until the sauce is thick and creamy.

Add sugar, vanilla extract, ground cinnamon, nutmeg and whisk until everything is blended.

Add the cooked pasta and stir until the pasta is nicely coated with the sauce.

Mushroom Florentine Pasta

I always make Chicken Florentine Pasta but my daughter wanted to take Florentine Pasta to school and share it with a friend who is a vegetarian. So, I made the pasta with shiitake mushrooms to get that meaty flavour at the same time keep it vegetarian. Kids loved this pasta and wanted me to continue with shiitake mushrooms going forward.

Preparation Time : 5 minutes

Cook Time : 25 minutes

Serves : 4

Ingredients:

Shiitake Mushrooms: 10 diced

Penne pasta : 350 grams

Extra virgin olive oil : 1 tablespoon

Fresh ground pepper and salt

Oregano : 1/2 teaspoon

Italian seasoning: 1 teaspoon

Red chilli flakes : 1/2 teaspoon

Garlic cloves : 3 minced

Tomato : 1 1/2 cups chopped

Heavy cream : 2 cups

Shredded mozzarella : 1 1/2 cups

Grated Parmesan cheese : 3/4 cup

Baby spinach : 1 1/2 cups

Parsley : 2 tablespoons chopped

Method:

In a large vessel, cook penne pasta according to package instructions until al dente. Drain, add some oil and keep aside.

Heat oil in a large pan, add mushrooms, salt pepper, oregano and saute for 3 minutes. Keep aside.

In the same pan, add minced garlic and tomatoes and cook for 2 minutes.

Add fresh cream, mix well and bring the mixture back to a simmer. Add mozzarella and parmesan cheeses, stir until the cheese melts.

Add Italian seasoning, salt, pepper, red chili flakes, mix well and turn off the stove.

Add cooked pasta and baby spinach, toss well until the pasta is cooked well with the sauce.
