Veggie Noodle Salad

Zoodles is very famous where zucchini is made into noodles. Why just zucchini and leave other veggies so, I went and made noodle salad using a lot of vegetables. The color and texture was just amazing.

Preparation Time: 15 minutes

Serves : 3-4

Ingredients:

Zucchini : 2

Yellow squash : 1

Beetroot : 2 medium

Carrot : 1 large

Cabbage : 1/2 cup sliced thinly

Bell peppers : 1 cup julienned (red, yellow and green)

Lemon juice: 2 tablespoons

Salt and Pepper

Instructions:

Using a zoodle maker, make noodles of zucchini, squash, beetroot and carrot.

Add the veggie noodles, cabbage, bell peppers, lemon juice, salt and pepper in a bowl and toss well to coat. Let the salad rest for 15 minutes in the refrigerator so the flavors are soaked in.

Serve chilled.

Italian Braised Chicken

This Italian Braised Chicken is a one pot dish where the braised Chicken is cooked in tomato and basil sauce making the chicken full of flavours. The chicken is super tender and juicy. Serve it with some pasta or roasted vegetables.

You can use the chicken with skin, I couldn’t find any so I used skinless meat. Thighs are apt for the dish. I used drumsticks also as my kids love them.

Preparation Time: 10 minutes

Cook Time : 30 minutes

Serves: 4

Ingredients:

Chicken Thighs : 5

Salt and pepper to taste

Olive Oil : 2 tablespoons

Onion : 1 medium diced

Garlic : 4 cloves minced

Tomato puree : 2 cups

Italian basil : 10 leaves chopped

Red chilli flakes : 2 teaspoons

Brown sugar : 1 teaspoon

Parsley to garnish

Instructions:

Wash and pat dry the chicken pieces.

Heat a dutch oven or a skillet on high heat, add the chicken pieces and season them with salt and pepper. brown the chicken on both sides. Take them out and keep aside.

Lower the flame to medium, in the same pan, add olive oil, add onions, garlic and saute for 2-3 minutes until the onion is soft and translucent.

Add tomato puree, basil leaves, salt, red chilli flakes and stir. Add braised chicken with the juices, cover and simmer for about 15 minutes.

Add brown sugar, stir to combine and garnish with parsely.

Serve immediately.

Simple Mexican Rice

This Mexican Rice is a simple side dish for any Mexican Dinner. It’s perfect for taco night too.

Preparation Time: 5 minutes

Cook Time : 25 minutes

Serves : 3-4

Ingredients:

Onion : 1 medium chopped

Tomato sauce : 1/2 cup

Long grain rice : 1 cup

Garlic salt : 1 teaspoon

Ground Cumin : 1 teaspoon

Salt to taste

Chicken broth : 2 cups

Oil : 3 tablespoons

Instructions:

Heat oil in a saucepan, add rice and fry till the rice is golden brown. Add salt, garlic salt, cumin. Stir to combine.

Add onions and cook till they are translucent. Add tomato sauce, chicken broth, stir and bring it to a boil.

Reduce heat, close lid and cook for another 15-20 minutes until the rice is completely cooked.

Turn off the stove and let it rest for 5 minutes. Fluff up with a fork before serving.

Oven Roasted Chicken

This Oven Roasted Chicken is simple spice mixture rubbed onto chicken thighs and drumsticks and baked to perfection. It’s a perfect dish to make for dinner.

Preparation Time : 5 minutes

Bake Time : 45 minutes

Serves : 3

Ingredients :

Chicken Thighs with bone : 3

Chicken Drumsticks : 3

Extra virgin olive oil : 2 tablespoons

Garlic : 3 cloves minced

Salt : 1 teaspoon

Fresh ground black pepper : 1 teaspoon

Lemon juice : 2 tablespoons

Chilli powder : 2 teaspoons

Turmeric : 1/2 teaspoon

Dry Oregano : 1/2 teaspoon

Dry Thyme : 1/2 teaspoon

Butter : 2 tablespoons

Method :

Pre heat the oven to 425 degrees F.

Wash and pat dry the chicken pieces. Make couple marks on the chicken pieces.

In a medium sized bowl, add all ingredients except chicken and mix well.

Take an oven safe pan, put the chicken pieces in it and rub the spice mixture on both sides of the chicken pieces.

Place the pan in the oven and bake for 40-45 minutes. Let it rest for 5 minutes before serving.

Serve hot with some salad.

Chicken Keema Curry

This is a simple to make curry that goes well with rice or roti. Chicken keema is minced chicken. It hardly takes 20 minutes to prepare the dish.

Preparation Time: 5 minutes

Cook Time : 15 minutes

Serves : 3-4

Ingredients :

Chicken keema : 450 grams

Onion : 1 large chopped

Ginger garlic paste : 1 teaspoon

Tomato : 2 medium chopped

Red chilli powder : 1 1/2 teaspoons

Chicken masala or garam masala : 1 teaspoon

Turmeric : 1/2 teaspoon

Salt to taste

Oil : 2 tablespoons

Method:

Heat oil in a pan, add onions and saute until they turn translucent.

Add ginger garlic paste and saute for 1 minute. Add tomatoes and cook until they turn mushy.

Add the chicken, red chilli powder, masala, salt, turmeric, mix well and cook for 5 minutes.

Stir and separate any chunks and cook for another 5 minutes.

Turn the stove off and serve hot with rice or roti.

Vegetable Lasagna Soup

This Vegetable Lasagna Soup is a filling soup with lots of fresh vegetables. Then mixed lasagna cheeses are added into the soup.  The cheese will melt perfectly into the hot soup.

Preparation Time: 15 minutes

Cook Time : 30 minutes

Serves : 4

Ingredients:

Onion : 1 medium chopped

Carrots : 1 large diced

Garlic : 2 cloves minced

Vegetable broth : 1 litre/32 oz

Tomatoes : 8 medium diced

Tomato sauce : 1 cup

Zucchini : 1 medium diced

Mushrooms : 1 cup sliced

Dried basil : 1 teaspoon

Dried Oregano : 1/2 teaspoon

Dried Thyme: 1/4 teaspoon

Dried rosemary : 1/2 teaspoon

Sugar : 1/2 teaspoon

Salt and pepper to taste

Lasagna sheets : 6 broken into pieces

Baby Spinach : 1 cup roughly chopped

Fresh parsley : 1 tablespoon chopped

Cheeses:

Shredded Mozzarella cheese : 1/2 cup

Shredded parmesan cheese : 1/4 cup

Ricotta cheese : 1/2 cup

Method:

Heat olive oil in a large pot over medium heat, add onions, carrot and saute for 5 minutes. Add garlic and saute for another minute.

Add the broth, tomatoes, tomato sauce, zucchini, mushrooms, herbs, stir well and bring it to a boil.

Add pasta, close lid and simmer stirring occasionally. Cook for 12 minutes.

Add the cheeses, stir well and add spinach.

Turn off the stove, add parsley and serve hot.

Vegetable and Barley Soup

My love for soups is never-ending. I feel like kids and hubby eats more variety of vegetables when added to the soups verses making a curry. So, I keep trying new soups with a different blend of spices and vegetables. I wanted to make it a nutritious soup for dinner so added barley and it turned out delicious. The best part is, it’s a one pot dish.

Made this soup for our blogging marathon #107, week 3, day 3 under one pot dishes.

Preparation Time: 5 minutes

Cook Time : 45 minutes

Serves: 5-6

Ingredients:

Onion : 2 medium chopped

Garlic : 2 cloves minced

Carrot : 2 medium diced

Cabbage : 1 cup chopped

Tomato sauce : 1/2 cup

Pearled barley : 200 grams

Dried basil : 1/2 teaspoon

Dried Oregano: 1/2 teaspoon

Fresh ground black pepper : 1/2 teaspoon

Red chilli flakes : 2 teaspoons (adjust to your tastebuds)

Vegetable broth : 6 cups

Potato : 1 large peeled and diced

Broccoli : 1 cup florets

Peas : 1/2 cup

Lemon juice: 1 teaspoon

Method:

Heat oil in a large pot and add onions, garlic and saute for 4 minutes until the onions turn translucent.

Add carrots, cabbage, tomato sauce, barley, basil, oregano, red chilli flakes, pepper, salt, vegetable broth, stir and close lid over medium hi-heat and bring it to a boil.

Turn down the heat a little and simmer for 30 minutes close lid. Stir occasionally.

Add potatoes, broccoli, peas, stir and cook for another 10 minutes.

This vegetable soup is full of flavours and comforts you in these winter evenings. It’s a versatile soup as you can add any vegetables of your choice or just clean out your refrigerator. This soup hardly take 30 minutes to make.

Made this soup for our Blogging marathon #107, week 3, day 2 under one pot dishes category.

Preparation Time : 10 minutes

Cook time : 20 minutes

Serves : 3-4

Ingredients:

Onion : 1 large chopped

Ginger : 1 teaspoon minced

Garlic :  2 cloves minced

Carrots : 2 medium chopped

Potatoes: 3 medium peeled and chopped

Tomatoes: 2 chopped

Peas : 1/2 cup

Vegetable broth : 6 cups

Italian seasoning: 1 teaspoon

Ground black pepper : 1/2 teaspoon

Celery salt : 1/2 teaspoon

Dry parsley : 1 teaspoon

Salt to taste

Method:

Heat 2 teaspoons of oil in a medium pot, add onions, ginger, garlic and saute for 2 minutes until the onions are translucent.

Add all the vegetables and saute for 3 minutes until the carrots and potatoes are tender.

Add vegetable broth, all the spices, mix well and bring it to a boil on medium heat. Simmer and cook for another 15 minutes and turn off the stove.

Serve immediately.

Vegetable and Pasta Soup

Winter nights call for nice hot soups. Vegetables and pasta in the soup makes it delicious and healthy. This soup is versatile as you can add your choice of vegetables and pasta. This is a one pot dish and super easy to make. Everyone at home loved this soup. Even my little one cleaned her bowl.

Made this soup as part of our blogging marathon #107, week 3 day 1 under one pot meals theme.

Preparation Time: 10 minutes

Cook Time : 20 minutes

Serves : 3-4

Ingredients:

Garlic cloves : 3 minced

Onion : 1 medium chopped finely

Carrot : 2 medium chopped finely

Broccoli : 1 cup cut into small pieces

Chicken/veg broth : 1 liter

Pasta : 1 cup

Italian seasoning: 1/2 teaspoon

Dry Parsley : 1 teaspoon

Dry basil : 1/2 teaspoon

Celery salt : 1/2 teaspoon (optional)

Rosemary : 1/2 teaspoon

Cilantro and parmesan cheese to garnish

Method:

Heat oil in a saucepan and add cloves. Saute for 30 seconds.

Add onions, carrots and broccoli, stir and sauce for 2-3 minutes.

Add the broth and bring it to a boil. Add pasta, all the spices and cook for 8-11 minutes until the pasta is cooked.

Carrot Radish Soup

Winter months call for yummy hot soups. Got fresh radish in the local market and the only way I can feed the kids is to make it invisible for them.

So, I grated some carrots and radish and made soup. Surprisingly my little one loved the soup and finished her bowl. I loved it too.

Made this delicious soup for our Blogging Marathon 106, week 1, day 2. The category I picked is soups and stews.

Preparation Time: 10 minutes

Cook Time : 10 minutes

Serves : 2

Ingredients:

Onion : 1 medium chopped finely

Green chilies : 2 finely chopped

Garlic cloves : 3 minced

Cabbage : 1/3 cup finely chopped

Carrot : 1 medium grated

Radish : 1 medium grated

Vegetable stock : 3 cups

Cilantro/Coriander leaves : 1 bunch chopped

Salt and pepper

Method:

Heat oil in a medium sized sauce pan, add onions, green chilies, garlic and saute for 3 minutes until the onion turns translucent.

Add cabbage, carrot, radish and saute for 1 minutes. Add the vegetable stock and bring it to a boil.

Add salt, pepper, cilantro and cook for 1 minute.
