Chocolate Banana Bread

Banana Bread is a kids favorite at home and once I added chocolate to their favorite bread, they loved it. The flavors go really well. Banana Nut Bread that I make has loads of walnuts whereas Chocolate Banana has loads of chocolate chips and cocoa.

Preparation Time : 15 minutes

Bake time : 60 minutes

Makes : 1 loaf

Ingredients:

All purpose flour : 1 1/2 cups

Cocoa Powder : 1/2 cup

Baking powder : 1/2 teaspoon

Baking soda : 1 teaspoon

Butter : 1 stick/ 1/2 cup

Granulated sugar : 1/2 cup

Brown sugar : 1/4 cup

Eggs : 2 large

Ripe Bananas : 3 medium mashed

Chocolate chips : 1/2 cup

Instructions:

Preheat the oven to 350 degrees F.

In a medium size bowl, cream butter and sugars until they turn light and fluffy.

Add eggs, banana and stir to combine.

Add flour, cocoa powder, baking powder, baking soda, chocolate chips and stir to combine. Do not over mix.

Grease and flour a 9×5 loaf tin, add the batter and bake for 55-60 minutes or until a toothpick comes out clean.

Let the bread rest for 10 minutes in the tin before transferring it onto a cooling rack.

Whole Wheat Bread

Whole wheat Bread is very popular and fairly easy to make at home. Kneading extremely well to get a soft and light dough is really important for a perfect loaf of bread. This bread can be used to make toast, sandwiches and even croutons.

Use only whole wheat flour. You can use chakki atta too but no multi grain atta.

Preparation Time : 5 minutes

Kneading time: 12 minutes

Resting time : 1-2 hours depending on the weather

Bake Time : 30 minutes

Makes : 1 loaf

Ingredients:

Warm Milk : 1 cup

Regular Sugar : 2 tablespoons

Active Dry Yeast : 1/2 tablespoon

Whole wheat flour : 3 cups

Salt : 1/2 teaspoon

Warm water : 1/2 cup + 2 tablespoons

Oil : 2-3 tablespoons

Milk and butter for brushing

Instructions:

In a medium size bowl, add warm milk, sugar, yeast, mix and let it sit for 7-10 minutes until the yeast is activated. Keep the bowl covered.

To the yeast mixture, add the flour, water, salt and start kneading. Pull the mixture onto a clean surface and keep kneading while adding the oil. Knead well until the dough is lighter in colour, elastic and soft. That will take about 10-12 minutes. (There is no such thing called over kneading so don’t worry)

Grease a large bowl and place the dough in it and cover it with a damp cloth.

Once the dough is double it’s size, take the dough onto a clean working surface, pull the edges and close into the middle. Gently pat the dough into a rectangle shape, roll and tuck the edges forming a cylindrical shape. Pinch the ends and pat to make it smooth as shown in the pics.

Grease a loaf tin, place the dough in it, cover it and keep aside for 30 minutes.

In the meanwhile, pre heat the oven to 180 degrees C.

Once the dough is ready, brush it with milk and bake for 30 minutes.

Take it out of the oven, let it cool for 30 minutes before taking the bread out of the oven and let it cool on a cooling rack. Wait until the bread is almost room temperature before slicing the bread.

Point to note is the bread should be consumed within 3 days as there are no preservatives. Otherwise refrigerate it to increase the shelf life.

Add warm milk, sugar and yeast to activate yeast.
Add flour, salt, water and oil
Knead for 10-12 minutes
Let the dough rise to double the quantity
Roll and tuck the edges. Pinch and seal
Sealed and ready to go into the tin
Brush with butter as soon as the loaf is out of the oven

Sweet Rolls with Cinnamon Butter

These Sweet Rolls are so much similar to the rolls served at Texas Roadhouse. Texas Roadhouse is a restaurant in US and the rolls they serve are super soft, buttery and sweet. The rolls are served with Cinnamon butter. The combination is super delicious.

Preparation Time: 1 1/2 hours

Bake Time : 20 minutes

Makes : 15 rolls

Ingredients:

Warm water : 1/4 cup

Granulated Sugar : 1 teaspoon

Active dry yeast : 2 teaspoons

Milk : 1 cup lukewarm

Unsalted butter : 1 1/2 tablespoons melted and slightly cooled

Granulated Sugar : 1/4 cup

All purpose flour : 3 /12 to 4 cups

Egg : 1 large

Salt : 1 teaspoon

Melted butter to brush the rolls

Cinnamon Butter:

Unsalted butter : 4 tablespoons/ 1/2 stick softened

Powdered sugar : 1/8 cup

Honey : 1/8 cup

Ground Cinnamon: 1/2 teaspoon

Instructions:

In a small bowl, add warm water, sugar, yeast, stir, cover and let it rest for 10 minutes until the yeast is activated.

In a large bowl, add milk, butter, sugar, eggs, salt and mix using a dough hook or even with hands.

Add the flour little bit at a time and mix until a soft dough is formed. Mix the dough until it comes clean from sides of the bowl.

Place the dough in a greased bowl and cover it with a damp cloth. Let it rest for 1 hour or until the dough is doubled in size.

Punch down the dough, place it on a floured surface and roll it into 1/2 inch thick rectangle. Cut the dough into squares and place them on to a greased cookie sheet. Cover with a damp cloth and let them rest for 30 minutes.

Pre heat the oven to 350 degrees F/ 175 degrees C.

Bake the rolls for 15-20 minutes or until the top is golden brown. Take them out and brush the rolls with melted butter.

In a small bowl, whisk all the ingredients listed for Cinnamon butter.

Serve the rolls hot with Cinnamon Butter.

*My little one wanted to cut the squares so please pardon the shape.

Breadsticks

Kids love Olive garden breadsticks as they are soft, fluffy and chewy with buttery topping. Making these breadsticks at home is really easy. They are so delicious, they are gone in no time.

Preparation Time: 20 minutes

Resting Time : 2 1/2 hours

Bake Time : 12 minutes

Makes : 12

Ingredients:

Active dry yeast : 1 1/4 teaspoon

Warm water : 1 cup + 2 tablespoons

Sugar : 2 tablespoons

All purpose flour : 3 1/2 cups

Salt : 1 1/2 teaspoons

Oil : 3 tablespoons

Topping:

Butter : 2 tablespoons

Salt : 1/4 teaspoon

Garlic powder : 1/4 teaspoon

Instructions:

In a bowl, add yeast, sugar and 1/2 cup warm water. Stir and cover. Let it rest for 10 minutes to activate.

In a large bowl, add all purpose flour, salt, yeast mixture, rest of the water, oil and knead well for 7-9 minutes until the dough is smooth and elastic.

Transfer the dough to a greased bowl, cover with wet cloth or cling wrap and let it rest for 1 1/2 hours or until the dough is double it’s size.

Gently punch the dough down, divide into 12 equals portions. Make each portion into a 9 inch rope on a lightly floored surface and place them on a greased and dusted cookie sheet.

Cover with wet cloth or cling wrap and let it rest for 45 minutes to 1 hour.

Preheat the oven to 425 degrees F during the last 15 minutes of second proofing.

Place the cookie sheets into the oven and bake for 12 minutes or until the tops are golden brown.

In the meanwhile, in a small bowl, mix all the ingredients listed under topping.

Take the breadsticks out, gently brush the topping and let them rest for 5 minutes before serving.

I served the breadsticks with olive oil dip made with extra virgin olive, fresh ground pepper and salt. They taste delicious with Marinara sauce.

Italian Bread

Fresh Italian Bread is a pure bliss. Making this at home is pretty easy but just little technique and patience.

I love the top to be nice a rich. If you want this top, use whole egg. If you want a lighter top, just use the egg white.

Preparation Time: 15 minutes

Rest Time : 1 hour + 30 minutes

Bake Time : 25-30 minutes

Makes : 3 loaves

Ingredients:

Warm water : 1/2 cup

Granulated sugar : 1/2 teaspoon

Active dry yeast : 1 1/2 tablespoons

Hot water : 2 cups (don’t use boiling water)

Granulated Sugar : 3 tablespoons

Salt : 1 tablespoon

Olive oil : 1/2 cup

All purpose flour : 5 1/2 – 6 1/2 cups

Egg : 1 for brushing

Instructions:

In a medium size bowl, add warm water, sugar, yeast and stir. Let it rest for 10 minutes for the yeast to rise.

In a large bowl, add the hot water, sugar, salt and mix well. Add 3 cups of flour and stir to combine using a dough hook on a hand blender or a stand mixer.

Add the activated yeast, rest of the flour one cup at a time and mix well to combine. The dough will be sticky. Just add the flour until the dough is pliable.

Pull the dough from the sides, cover with a wet cloth and let it rest for 1 hour.

Place the dough onto a floured surface, divide the dough into three equal portions.

Take one portion at a time, gently roll it into a rectangle. Then roll the dough like a jelly roll and pinch the sides to seal.

Take a cookie sheet, line it with a parchment paper and place two rolls on a sheet, another roll on another cookie sheet. Take a sharp knife and make 3 cuts.

Cover with a wet cloth and rest for 30 minutes.

Preheat the oven to 400 degrees F.

Brush the rolls with egg wash and Bake them for 25 minutes.

Once the rolls are done, let them rest for 1 hour before slicing them.

Burger Buns

These Buns are fairly easy to make and are perfect for Burgers. They are soft and mildly sweet and rich in taste with butter and egg in it.

I made chicken and veggie burgers using these buns are they were loved by everyone.

Preparation Time : 20 minutes

Bake Time : 15-18 minutes

Resting Time : 2 hours 45 minutes

Makes : 8 buns

Original Recipe : King Arthur Flour

Ingredients:

Active Dry Yeast : 1 1/4 tablespoons

Lukewarm water : 1 cup

All purpose flour : 3 1/2 cups

Egg : 1

Butter : 2 tablespoons at room temperature

Sugar : 1/4 cup

Salt : 1 1/4 teaspoon

Melted Butter and sesame seeds as topping

Instructions:

In a medium size bowl, add water, yeast and little bit of sugar, stir and let it proof for 10 minutes.

In a large bowl, Add all purpose flour, water, sugar, salt and yeast. Knead well to make a soft, smooth dough.

Place the dough in a greased bowl, cover it with a wet cloth and let it rise for 1 to 2 hours where the dough should be double the size.

Gently punch the dough, divide it into 8 equal pieces. Shape them into a round ball, flatten to 3 inch across. Place them on a parchment lined baking sheet, cover and let them rise for about an hour until they are puffy.

Preheat the oven to 375 degrees F.

Brush the buns with melted butter, add sesame seeds and bake them 15-18 minutes until the top is golden brown.

Remove them from the oven, brush a little more melted butter and let them cool on a rack.

Cinnamon Sugar Bread

This cinnamon sugar bread is a flavourful bread that can be served both as a breakfast and as a dessert. I first made this bread for a friend who gave upon cakes. It was her birthday and I wanted to bake something special for her which she would enjoy. She loved it and I made it several times after that. Kids love to eat it as breakfast and take it school for snack.

Sending this recipe over to our annual baking event bake-a-thon 2019.

Preparation Time: 15 minutes

Bake time: 55 minutes

Makes : 1 loaf of bread

Ingredients:

All purpose flour : 2 cups

Baking soda : 1 teaspoon

Butter : 1/2 cup (1 stick) softened

Sugar : 1/2 cup

Light brown sugar : 1/2 cup packed

Egg : 1 large beaten

Buttermilk : 1 cup

Vanilla extract : 1 teaspoon

Cinnamon mixture:

Sugar : 1/4 cup

Cinnamon powder: 1 1/2 teaspoons

Method :

Preheat the oven to 350 degrees F.

Grease or place a parchment paper on the bottom of the loaf pan, flour it and keep it aside.

Take a large bowl and cream together butter and both sugars until light and fluffy.

Add the egg, buttermilk, vanilla extract and mix well.

Add all purpose flour and baking soda and mix until just combined. Do not over mix. Batter will be slightly lumpy and that’s perfect.

In a small bowl, add sugar and cinnamon powder and mix well.

Add half of the batter to the loaf pan, sprinkle half of the cinnamon mixture and swirl batter with a knife.

Add rest of the batter to the loaf pan, sprinkle rest of the cinnamon mixture and swirl with a knife. Smooth the top.

Bake the bread for 50-55 minutes or until a toothpick comes out clean when inserted in the middle.

I added 1 teaspoon of cinnamon mixture on top of the bread but it’s optional.

Turn off the oven and let the bread rest until the pan is warm. Gently remove bread from the pan, let it cool for another 5 minutes before slicing.

Serve warm with some butter or store in an airtight container when is bread is at room temperature.

Apple Pie Bread

Apple Pie Bread as the name says it’s apple pie baked into a bread with out the hassle of dealing with the pie crust. Also, who doesn’t love a nice piece of bread with so much flavour! I was kind of scared when I first gave this recipe a try as it might be too moist in the middle and the bread might crumble but the bread turned out great and I made it a few times after the first trail on demand from my kids.

Made this bread as part of our blogging marathon #107, week 2, day 2 under kids delight hosted by Srividhya

Preparation Time: 10 minutes

Bake Time : 50 minutes

Makes : 1 loaf of bread

Ingredients:

Apples : 2 small peeled and chopped

Brown sugar : 1/3 + 1/3 cup

Ground Cinnamon :1/2 tablespoon

Butter : 3/4 cup (1 1/2 sticks) at room temperature

White sugar : 1/3 cup

Eggs : 2 beaten

Vanilla extract : 1 teaspoon

Cold milk : 1/3 cup

All purpose flour : 1 1/2 cups

Baking powder : 2 teaspoons

Method:

Preheat the oven to 350 degrees F.

Grease and flour the loaf pan or you can place a parchment paper and flour it.

New England Pumpkin Bread

I already have a Pumpkin Bread recipe on my blog but this tastes completely different than that one. This is a recipe that is shared by a dear friend and co-worker. We as a family and everyone at work enjoyed her bread every season.

Pardon my finished picture as I literally had to beg my kid and her friend so I can take a half decent picture. They wanted to eat it all.

Preparation Time: 15 minutes

Bake Time : 45 minutes

Makes : 3 loafs

Ingredients:

Eggs : 4

Sugar : 3 cups

Vegetable Oil : 1 cup

Cold water : 2/3 cups

Pumpkin puree: 16 oz (1 can if are using store bought)

Flour : 3 1/3 cups

Baking Soda: 1 1/2 teaspoons

Nutmeg : 1 teaspoon

Cinnamon : 1 teaspoon

Method:

Pre heat the oven to 350 degrees Fahrenheit.

Take a large bowl and beat eggs until they are frothy. Add sugar, vegetable oil, cold water and beat until frothy.

Add pumpkin puree, flour, baking soda, nutmeg, cinnamon and beat well.

Pour the mixture into bread pans and bake for 45 minutes or until the toothpick comes out clean.

Let it cool for at least 15 minutes before slicing the bread. Store the bread in a air tight container for 4-5 days.
