Glazed Carrots

These glazed carrots are made with simple ingredients like brown sugar and butter.  which makes these carrots really flavourful with a beautiful glaze.It serves as a delicious side dish for any meal during holidays.

I served these delicious carrots with the Thanksgiving meal and everyone loved it. You can use baby carrots or spring carrots for this dish. I couldn’t find neither so used regular carrots and sliced them.

Preparation Time : 10 minutes

Cook Time: 15 minutes

Serves : 4-6

Ingredients:

Carrots : 450 grams

Butter :  3 tablespoons

Brown sugar : 1/2 cup packed

Chicken or vegetable broth : 1/2 cup

Salt and pepper to taste

Dry rosemary : 1/4 teaspoon

Fresh mint : 1 teaspoon chopped

Method:

Wash and slice the carrots.

Melt butter in a heavy bottomed pan over medium heat. Add carrots and cook for 3 minutes stirring occasionally.

Add the stock and sugar and stir. Cover the pan and reduce heat to low. Cook for another 5 minutes or until the carrots are tender.

Remove the carrots of the pan and keep them aside.

Cover the pan and continue cooking until the mixture is syrup consistency.

Add the carrots back to the pan along with the spices and stir carefully. Turn off the stove  and serve as a side dish with any meal.

Vegetable Dum Biryani

Vegetable Dum Biryani is a very simple dish and you can add any vegetables of our choice. Fried onions and the spices mixed with the vegetables give the rice a delicious flavour.

Preparation Time: 10 minutes

Cook Time: 30 minutes

Serves: 4-5

Ingredients:

Basmati rice : 3 cups

Onion : 2 medium sliced and fried

Cashews: 2 teaspoons fried

Carrot : 1 large cut in circles

Potatoes : 2 diced

Green chillies : 2 slit

Green beans : 1/2 cup sliced

Peas : 1/2 cup

Cilantro/coriander leaves : 1 bunch chopped

Ginger garlic paste : 1 tablespoon

Yogurt/curd: 1/2 cup

Red chilli powder : 2 teaspoons

Garam masala : 2 teaspoons

Turmeric : 1/2 teaspoon

Salt to taste

Warm Milk : 1/2 cup+ 6 strands of saffron

Whole Spices:

Cloves : 7

Green cardamom: 6

Bay leaves : 2

Shahi jeera : 1 teaspoon

Mace : 2

Star Anise : 1

Cinnamon stick : 2 inch stick

Method:

Boil water in a large pot, add rice, salt and cook for 7-8 minutes. Drain the water, put a wet cloth over cooked rice in a bowl and keep aside.

Heat oil in a large pot, add all the ingredients listed under whole spices and saute for 1 minute. Add ginger garlic paste and saute for 30 seconds.

Add potatoes, green beans,  green chillies, peas, half of the cilantro and saute for 4 minutes. Add salt, red chilli powder, turmeric, yogurt, mix well and cook for 5 more minutes.

Add cooked rice, fried onions, fried cashews, cilantro, warm milk, close lid put some weight on top and cook for 7-8 minutes.

Let it rest for 5-10 minutes before serving.

Chia Pudding Breakfast Bowl

Chia Seeds have a lot of nutritional value. Making chia pudding doesn’t require any cooking. Add on your favourite fruit, micro greens, some granola to the pudding and it’s a wholesome breakfast.

Preparation Time: 10 minutes

Rest Time : 4 hours – overnight

Serves : 2-3

Ingredients:

To soak:

Chia seeds : 5 tablespoons

Honey : 2 tablespoons

Milk : 2 cups

Toppings:

Banana : 1 large sliced

Apple : 1 diced

Microgreens : 1/4 cup

Granola : 1/3 cup

Instructions:

In a bowl, add chia seeds, honey, milk, mix well and soak in the refrigerator for at least 4 hours or overnight.

Add all the toppings and serve as breakfast.

Cheesy Pesto Rolls

Fresh hot Cinnamon rolls are just to die for. But, why just satisfy with the sweet version so I experimented using pesto sauce instead of Cinnamon filling and family loved it. So, here is the recipe….

Preparation Time: 20 minutes 
Proofing Time : 1+1 hours
Baking Time: 25 minutes 

Ingredients
:

For Pesto Roll Dough:

Active Dry Yeast : 1 package or 2 1/4 teaspoons
Warm milk : 1 cup
Sugar : 1 tablespoon
Melted butter : 1/3 cup
Salt : 1 teaspoon
Eggs : 2 large
All purpose flour: 4 cups

Filling:  Basil Pesto

Cheddar Cheese : 2 cups

Method:
Take 1/2 cup warm milk, sugar and yeast in a bowl mix well, cover it and let it proof for 7-10 minutes or until it’s nice and foamy.

Take a large bowl and add butter, eggs, salt, proofed yeast, 2 cups of flour and beat on 3 speed until a smooth mixture is formed. Add the remaining flour, and form a soft dough. (The dough will be sticky)

Add some flour on your work surface and place the dough on it. Knead until smooth and elastic for about 6-8 minutes. Place the dough in a greased bowl and cover with a plastic wrap.

Keep it in a warm place and let it rise to double its size. This should take approximately an hour.

Punch down the down, divide in half. Flour the surface and roll one portion into a 11×8 in. Rectangle. Brush with 1/2 of the pesto leaving a small edge.

Roll up as shown in the pictures, pinch seam to seal. Cut into 1 inch pieces. Place them in a greased 13×9 inch cake pan, cover with a wet cloth and let it rise for 1 hour.

Repeat the same process with the remaining dough.

Meanwhile preheat the oven to 350 degrees Fahrenheit. Bake for 20-25minutes or golden brown, take the rolls out, brush with some pesto and sprinkle cheese on top. Put it back in the oven and bake for another 5 minutes or until the cheese is melted. Once done, take the tray out and cool on wire racks before serving for 5 minutes.

Serve immediately with some pesto or Fresh Tomato Marinara Sauce as a dip.

Mango Parfait

Mango is in season and I have a lot of them at home that I got from my farm. Kids are getting bored of eating plain mangoes so I made this parfait and my daughter loved it. This parfait has the goodness of fresh mango pulp, yogurt, few mango pieces and lots of granola.

Preparation Time: 10 minutes

Serves : 1

Ingredients:

Fresh Mango pulp : 1 1/2 cups

Yogurt : 3/4 cup

Sugar : 1 teaspoon

Mango chunks : A few

Granola with nuts : 1/4 cup

Instructions:

Add sugar to yogurt and beat well.

In a Glass or jar, add mango pulp, yogurt and top it off with Mango Chunks and then with Granola.

Serve immediately.

Mexican style Chicken Pasta

This Pasta is as the name says is made with Mexican spices. It’s a pretty simple dish that’s perfect for weeknights.

Preparation Time : 10 minutes

Cook Time : 30 minutes

Serves : 4

Ingredients:

Spaghetti : 340 grams

Extra virgin olive oil : 1 tablespoon

Boneless Chicken : 450 grams diced

Salt and pepper to taste

Onion : 1 large sliced

Red bell pepper : 1 sliced

Green bell pepper : 1 sliced

Red chilli powder : 1 tablespoon

Dried Oregano : 2 teaspoons

Ground Cumin : 1 tablespoon

Tomato sauce : 1 1/2 cups

Chicken broth : 3/4 cup

Fresh cream : 1/2 cup

Cheddar cheese : 1 cup shredded

Instructions :

Boil the pasta in a large pot according to the package instructions. The pasta should be al dente. Drain the pasta, add some oil and keep aside.

Meanwhile, In a large pan, heat oil and add chicken, salt, pepper and cook for 10 minutes until the chicken is light brown.

Add onion, peppers and cook for 6-7 minutes, add tomato sauce, spices, chicken broth, fresh cream and cook for 3-4 minutes.

Add cheddar cheese, cooked pasta and toss well. Cook for 2 minutes.

Turn off the stove and serve immediately.

Crumpets (Sourdough)

I wanted to try my hands on making sourdough bread so started making the starter. I’m discarding the starter as part of this process. It’s day 10 that I’m feeding my starter and don’t want to throw the precious starter.

So, I looked up some recipes made with the discard and came across this crumpets recipe on King Arthur Flour website. I made a few modifications to the recipe to suite kids taste buds and they loved it. My younger wants me to make these crumpets more often. She smeared some nutella on them but they can be served with jam.

Preparation Time : 3 minutes

Cook Time : 5 minutes per batch

Makes : 10 crumpets

Ingredients:

Sourdough starter : 1 1/2 cups (unfed/discard)

Sugar : 2 1/2 teaspoons

Salt : 1/2 teaspoon

Baking soda : 1/2 teaspoon

Instructions:

Add all the ingredients to a medium sized bowl and stir. The batter should rise up and bubble a little.

Heat a pan over medium-low heat, smear some butter and pour a 1/4 cup or small ladle of batter. Depending the size of the pan, you can make 3-4 crumpets at a time.

Let the crumpets cook till the top is set and you see small holes. This should take about 3 minutes. Flip and cook for another 2 minutes.

Serve hot with Nutella, jam and/or butter.

Note :

Starter discard that is day 7 or higher works better for this recipe. You can also buy the starter and make these.

Double chocolate Cookies

I have already posted several chocolate cookies but this one is chocolaty with chocolate chips mixed in it with the goodness of brown sugar. These flavours just burst in every bite of these cookies.

These cookies are one of my kids and their friends favourite. Never even got a chance to store them so far, the plate gets empty while they are still warm.

Preparation Time: 10 minutes

Bake time : 12-15 minutes

Makes :  12 cookies

Ingredients:

Salted Butter : 1/2 cup at room temperature (1 stick)

Brown sugar : 1 cup lightly packed

Egg : 1 at room temperature

Vanilla extract : 1 teaspoon

All purpose flour : 1 cup

Cocoa powder : 1/4 cup

Baking powder : 1/2 teaspoon

Chocolate chips: 1/2 cup

Method:

In a medium bowl, beat the butter and brown sugar until it’s light and fluffy.

Add the egg, vanilla and beat to combine.

Add the all purpose flour, cocoa powder, baking powder and mix well.

Add the chocolate chips and fold them into the dough.

Make equal sized balls out of the dough and place them on a lined sheet. Press them lightly and refrigerate for 30 minutes.

Preheat the oven to 350 degrees Fahrenheit.

Place the the cookie tray in the oven and bake them for 12-15 minutes or until the edges are little brown.

Once the cookies are out of the oven, let them rest for 10 minutes before serving.

Vegetable Lasagna Soup

This Vegetable Lasagna Soup is a filling soup with lots of fresh vegetables. Then mixed lasagna cheeses are added into the soup.  The cheese will melt perfectly into the hot soup.

Preparation Time: 15 minutes

Cook Time : 30 minutes

Serves : 4

Ingredients:

Onion : 1 medium chopped

Carrots : 1 large diced

Garlic : 2 cloves minced

Vegetable broth : 1 litre/32 oz

Tomatoes : 8 medium diced

Tomato sauce : 1 cup

Zucchini : 1 medium diced

Mushrooms : 1 cup sliced

Dried basil : 1 teaspoon

Dried Oregano : 1/2 teaspoon

Dried Thyme: 1/4 teaspoon

Dried rosemary : 1/2 teaspoon

Sugar : 1/2 teaspoon

Salt and pepper to taste

Lasagna sheets : 6 broken into pieces

Baby Spinach : 1 cup roughly chopped

Fresh parsley : 1 tablespoon chopped

Cheeses:

Shredded Mozzarella cheese : 1/2 cup

Shredded parmesan cheese : 1/4 cup

Ricotta cheese : 1/2 cup

Method:

Heat olive oil in a large pot over medium heat, add onions, carrot and saute for 5 minutes. Add garlic and saute for another minute.

Add the broth, tomatoes, tomato sauce, zucchini, mushrooms, herbs, stir well and bring it to a boil.

Add pasta, close lid and simmer stirring occasionally. Cook for 12 minutes.

Add the cheeses, stir well and add spinach.

Turn off the stove, add parsley and serve hot.

Black Grape smoothie

This Black Grape smoothie is a super simple drink with simple ingredients. My cousin sent me these farm fresh grapes and loved the taste and colour of them. My friends also tasted this smoothie and loved it.

Preparation Time : 5 minutes

Serves : 2

Ingredients:

Seedless Black Grapes : 1 1/2 cups

Cold milk : 3/4 cup

Yogurt : 1/2 cup

Honey : 2 tablespoons

Ice cubes: 1/2 cup

Flax seeds : 1/2 teaspoon (optional)

Method :

Take all ingredients in a blender jar and blend till smooth. Serve immediately.

 Note : Make sure the yogurt is sweet. Sour yogurt will change the taste.

Milk : Any milk, regular, soy or almond works well.
