Peanut Butter Mug Cake

This Peanut Butter Mug Cake is a simple cake that takes hardly 5 minutes to cook and enjoy.

Preparation Time: 3 minutes

Cook Time : 70 seconds

Serves : 1

Ingredients:

Brown Sugar : 2 1/2 tablespoons

Vegetable oil : 1 1/2 tablespoons

Egg white : 1

Peanut butter : 2 1/2 tablespoons

All purpose flour : 3 tablespoons

Baking powder : 1/4 teaspoon

Chocolate chips : 1 tablespoon

Instructions:

Add sugar, oil, egg white in a mug and whisk well.

Add peanut butter and whisk well.

Add flour, baking powder, chocolate chips and mix to combine.

Cook in a microwave on high for 70 seconds.

Chia Pudding Snack bowl

Chia Seeds have a lot of nutritional value. Making chia pudding doesn’t require any cooking. Add on your favourite fresh fruit or fruit crush, mixed seeds and granola or corn flakes.

Preparation Time: 10 minutes

Rest Time : 4 hours – overnight

Serves : 2-3

Ingredients:

To soak:

Chia seeds : 5 tablespoons

Honey : 2 tablespoons

Milk : 2 cups

Toppings:

Fresh fruit or fruit crush : 2 tablespoons

Mixed seeds and nuts : 2 tablespoons

Granola or corn flakes : 1/3 cup

Instructions:

In a bowl, add chia seeds, honey, milk, mix well and soak in the refrigerator for at least 4 hours or overnight.

Add all the toppings and serve.

Chocolate Peanut butter Rice Crispy Bites

Rice Crispy Treats are normally a kids favourite snack. So as Reese Peanut butter cups. So, what if we combine the flavours and make it a healthy snack at the same time. That’s what these Chocolate Peanut butter rice crispy bites are.

Preparation Time: 5 minutes

Set time : 1-2 hours in the refrigerator

Makes : 15 bites

Ingredients:

Rice Crispies : 3 cups

Creamy Peanut butter : 3/4 cup

Honey : 2 tablespoons

Semi sweet chocolate chips : 1 cup

Peanut butter : 2 tablespoons

Instructions:

In a medium size microwave safe bowl, add 3/4 cup peanut butter, honey and heat for 40 seconds until it’s warm but nice and smooth.

Add the rice crispies, mix well to combine. Take a 8×8 cake pan, line it with parchment paper and grease it.

Add the rice crispy mixture into the pan and press tight so everything is nice and uniform.

In a bowl, add the chocolate chips and melt them in a microwave until they are soft and creamy. Add peanut butter and mix well to combine.

Add the chocolate mixture on top of the rice crispy layer and refrigerate for 1-2 hours until the chocolate is hard and holding well.

Take the pan out of the refrigerator, cut them into 2×2 bites and serve.

Aratikaya Bajji/ Plantain Bajji

Aratikaya Bajji / Plantain Bajji is a popular evening snack in Andhra. The process is pretty simple, Plantains are thinly sliced, dipped in batter and fried. As simple as that.
Preparation Time: 10 minutes
Cook Time: 3-4 minutes per batch
Serves: 2-3
Ingredients:
Aratikaya/Plantain : 2 large sliced as shown in the pic
To make the Batter:
Besan/Senagapindi: 1 cup
Rice Flour/Biyyappindi: 1/4 cup
Red chilli powder: 2 teaspoon
Baking soda: 1/2 teaspoon
Coriander powder: 1 teaspoon
Salt to taste
Water: 3/4 cup
Method:
Take a large bowl of water with salt, peel and cut the plantain and put the pieces in the water so there is no dis coloration.
Mix all ingredients listed under for batter to make your batter.
Heat oil for deep frying, dip the eggplant pieces into the batter and drop them into the oil. Fry them on both sides till they turn golden brown for about 3-4 minutes.
Serve hot with some hot sauce or ketchup.
Note: apply some oil on your hands and the knife before peeling  the plantains. It’s very sticky.

Yogurt Parfait

This yogurt parfait works well for breakfast, snack or even a desert. It’s made with yogurt, blueberry slush, fresh blueberries and granola.

Preparation Time : 5 minutes

Serves : 1

Ingredients :

Cold Yogurt : 1 cup beaten

Blueberry slush : 2 tablespoons

Fresh blueberries : 1/4 cup

Granola with nuts : 2 tablespoons

Method:

In a glass jar, add 1/2 cup yogurt, 1 tablespoon, 1/8 cup fresh blueberries, 1 tablespoon of granola and repeat the layers in the same order topping off with granola and more fresh blueberries.

Serve immediately.

This Amaranth mix namkeen is a healthy and yummy snack that is made with puffed Amaranth seeds, small poha, masoor dal, cashews and spices. It makes a perfect snack for tea time and after school.

Preparation Time : 5 minutes

Cook Time : 5 minutes

Makes : 2 cups

Ingredients :

Puffed amaranth seeds : 1 cup

Small poha : 1/2 cup

masoor dal : 1/4 cup

Cashews: 1/3 cup

Raisins : 1 teaspoon chopped

Curry leaves : 2 sprigs

Pink Himalayan salt : 1 teaspoon

Red chilli powder : 1 teaspoon

Method:

Heat 2 teaspoons of oil in a pan, add curry leaves, cashews, salt, red chilli powder and toss well for 1 minute. Add rest of the ingredients and toss well. fry for 2 minutes until they are crunchy.

Let the mixture cool completely before storing in a air tight container.
