French Toast Roll Ups

These French Toast Roll ups are easy to make for breakfast or snack. My younger one said they taste like donuts.

These can be served with some chocolate sauce or maple syrup.

Preparation Time: 5 minutes

Cook Time : 5 minutes

Serves : 2

Ingredients:

Sandwich Bread: 6 slices

Eggs : 2 large

Brown sugar: 2 tablespoons

Vanilla extract: 1/2 teaspoon

Milk : 1/3 cup

Cinnamon powder : 1/2 teaspoon

Butter : To toast

Method :

Take a small bowl and add all the ingredients except bread and butter. Using a fork, mix well to form the batter.

Take the bread slices, cut the edges and flatten them using a rolling pin.

Roll each bread slice, dip them into the batter.

Heat a frying pan, add some butter. Now place the rolls on the pan and fry till golden on all slices.

Serve immediately with chocolate sauce or maple syrup.

Nutella Toast

I used to make Nutella and fluff sandwiches with fresh French bread when I lived in US. Kids loved it. But, not able to find fluff here in India made kids miss those sandwiches.

I made fresh Italian bread for lunch and decided to use it to make something for breakfast for the kids.

So, baked the bread with some butter and smeared some Nutella. Kids loved the taste.

Preparation Time : 5 minutes

Bake Time : 10 minutes

Serves : 2-3

Ingredients:

Italian Bread : 8 slices

Softened Butter : 3 tablespoons

Nutella: As per taste

Method :

Pre heat the oven to 200 degrees C.

On a cookie sheet, place a butter paper or aluminium foil and arrange the bread slices.

Smear the softened butter on all the slices.

Put the tray in the oven and bake for 5 minutes.

Take the tray out, flip the slices and smear butter. Put the tray back in the oven and bake for another 5 minutes.

Take the slices out, smear some Nutella and serve hot.

This Spicy Cheese Toast sandwich is healthy, tasty and super easy to make. This sandwich can be served as breakfast or snack. It’ll become a kids favorite.

Green Chutney can be made fresh or you can use the store bought one. Recipe for the fresh Chutney is mentioned below.

Ingredients:

Sandwich Bread Slices : 4

Green Chutney: 3 tablespoons

Cheese Slices : 4

Butter : 1 tablespoon

Method:

Heat a fry pan and smear some butter. Add the bread pieces and toast till golden brown. Turn them and smear the green chutney on two slices. Add cheese on the other two slices.

Now place the chutney slice on the cheese and turn off the stove.

Serve immediately.

Cherry Tomato Pizza

Cherry Tomato Pizza is made with full of Italian spices, cherry tomatoes, basil and cheeses. Homemade pizza dough and marinara sauce gives a fresh flavour to the pizza. If you have the pizza dough ready, this pizza takes less than 30 minutes to prepare.

Preparation Time: 10 minutes

Bake Time : 15 minutes

Serves : 2-3

Ingredients :

Pizza Dough: 1/2 this recipe (you can use store bought dough)

Fresh Tomato Marinara Sauce : 4 tablespoons (store bought is fine too)

Cherry Tomatoes : 1/2 cup sliced

Basil leaves : 7-8

Italian seasoning : 2 teaspoons

Shredded Mozzarella cheese : 1/2 cup

Shredded Cheddar cheese : 1/2 cup

Method :

Preheat the oven to 500 degrees F.

Take a pizza pan, add few drops of olive oil and brush the entire pan. Take the pizza dough, flatten it to cover the pan and form an edge. Make impression in the middle with your fingers.

Add pizza sauce and smear it all over the pizza. Add cherry tomatoes, couple basil leaves, cheeses, Italian seasoning and bake for 15 minutes.

Take out the pizza, add rest of the basil leaves and let it sit for 5 minutes before slicing and serving.

Note: Add too many basil leaves before baking will burn the leaves so just add a couple and cover them with cheese.

This Peanut Butter Mug Cake is a simple cake that takes hardly 5 minutes to cook and enjoy.

Preparation Time: 3 minutes

Cook Time : 70 seconds

Serves : 1

Ingredients:

Brown Sugar : 2 1/2 tablespoons

Vegetable oil : 1 1/2 tablespoons

Egg white : 1

Peanut butter : 2 1/2 tablespoons

All purpose flour : 3 tablespoons

Baking powder : 1/4 teaspoon

Chocolate chips : 1 tablespoon

Instructions:

Add sugar, oil, egg white in a mug and whisk well.

Add peanut butter and whisk well.

Add flour, baking powder, chocolate chips and mix to combine.

Cook in a microwave on high for 70 seconds.

Veggie Noodle Salad

Zoodles is very famous where zucchini is made into noodles. Why just zucchini and leave other veggies so, I went and made noodle salad using a lot of vegetables. The color and texture was just amazing.

Preparation Time: 15 minutes

Serves : 3-4

Ingredients:

Zucchini : 2

Yellow squash : 1

Beetroot : 2 medium

Carrot : 1 large

Cabbage : 1/2 cup sliced thinly

Bell peppers : 1 cup julienned (red, yellow and green)

Lemon juice: 2 tablespoons

Salt and Pepper

Instructions:

Using a zoodle maker, make noodles of zucchini, squash, beetroot and carrot.

Add the veggie noodles, cabbage, bell peppers, lemon juice, salt and pepper in a bowl and toss well to coat. Let the salad rest for 15 minutes in the refrigerator so the flavors are soaked in.

Serve chilled.

This Chickpea Salsa salad is a simple yet refreshing salad made with chickpeas, spicy salsa and pomegranates. You can either make everything from scratch or just use the canned chickpeas and readymade salsa. I made everything and mixed them up.

Preparation Time : 10 minutes

Serves : 2

Ingredients :

Canned or soaked and boiled chickpeas : 1 1/2 cups

Salsa : 1/2 cup

Pomegranate seeds : 1/2 cup

Salt : 1/2 teaspoon

Fresh ground pepper : 1/4 teaspoon

Instructions:

In a medium size bowl, mix all the ingredients and refrigerate for 30 minutes. Serve as a side dish or as a main dish with some soup

Overnight Oats bowl is simple to make yet a filling and a healthy breakfast.

Preparation Time: 5 minutes

Serves : 1-2

Ingredients:

Rolled Oats : 1 cup

Milk of your choice : 1 1/2 cups

Honey : 2 tablespoons

Fruits and nuts of your choice

Instructions:

In a bowl, add oats, milk, honey, mix well and refrigerate overnight.

In the morning, add fruits, nuts and serve.

Masala Dosa

Dosa is a popular breakfast from South India. Dosa is a such a versatile dish that can be made with various filling or toppings. Masala Dosa is made with a potato filling. Serve it with some Andhra Senakkaram and ghee or Peanut and Coconut Chutney for Tiffins.

Preparation Time : 5 minutes

Cook Time : 3 minutes

Makes : 5-6 dosas

Ingredients :

Dosa Batter : 2 cups

For potato filling:

Potatoes: 4 medium boiled, peeled and mashed

Red chilli powder : 1 teaspoon

Onion : 1 small finely chopped

Coriander powder : 1/2 teaspoon

Cumin powder : 1/2 teaspoon

Ginger powder : 1/4 teaspoon

Chaat masala: 1/2 teaspoon

Cilantro/ coriander leaves : 3 tablespoons

Salt to taste

Instructions:

Take all the ingredients listed under for potato filling and mix well to combine.

Heat a dosa tawa, pour a large laddle full of batter on the tawa,  add 4-5 tablespoons of potato filling in the middle of the dosa as shown in the picture. Add a teaspoon of oil in the edges. Let it roast until the sides lift and dosa turns golden brown.

Take the dosa off the pan and serve immediately with some karam or chutney.

Carrot and Coriander Gunta ponganalu / Paniyaram

Ponganalu or paniyaram are ball shaped dumplings made with idli or dosa batter. These are one of the breakfast dishes made in South India. These Carrot and Coriander Ponganalu/Paniyaram is a simple dish made with Idli batter, grated carrot, coriander leaves and tempering. The Ponganalu taste delicious and it’s a good way to serve veggies and greens for breakfast.

You can find non stick pans and cast iron pans. I like the non stick pan as there is no need of oil in making this delicious breakfast.

Preparation Time: 5 minutes

Cook Time : 10-12 minutes

Makes : 24

Ingredients:

Idli Batter : 1 1/4 cup

Coriander leaves : 1 cup chopped

Carrot : 1 cup grated

Onion : 1 small chopped

For Tempering:

Jeera : 1/4 teaspoon

Mustard seeds : 1/4 teaspoon

Urad dal : 1/4 teaspoon

Curry leaves : 1 sprig

Method:

Take the idli batter in a bowl and add the chopped coriander leaves, grated carrot, chopped onions and mix well.

Heat oil for tempering, add the ingredients listed under for tempering except curry leaves and let the seeds splatter. Add curry leaves and add tempering to the batter.

Using a spoon, put the batter into the paniyaram pan and place the pan on the stove on medium heat. Close lid and cook for 5 minutes, turn the paniyarams and cook for another 5 minutes or until the outer layer is golden brown and crisp.

Serve hot with coconut chutney, peanut chutney or podi.
