Chicken Fajitas

This Chicken Fajitas is a flavourful dish that easy to make. It’s perfect for a weekday dinner. Chicken, peppers and onions are marinated with a blend of spices.

Preparation Time : 10 minutes

Marinating Time : 45 minutes

Cook Time : 10 minutes

Serves : 5-6

Ingredients:

Boneless chicken : 750 grams cut into strips

Onion : 1 large sliced

Green peppers : 1 julienned

Oil : 3 tablespoons

Dried Oregano : 2 teaspoons

Ground Cumin : 2 teaspoons

Red chilli powder : 1 teaspoon

Garlic powder : 1 teaspoon

Crushed red pepper : 1 teaspoon

Tortillas : 6

Instructions:

In a large bowl, add all ingredients listed except tortillas, mix well and keep in the refrigerator for 45 minutes.

Heat 1 tablespoon of oil in a pan and add the marinated chicken and veggies. Cook on medium heat until the chicken is cooked. It should take about 10 minutes.

Heat the tortillas, add the cooked chicken and veggies, some salsa and serve immediately.

Peanut Butter Mug Cake

This Peanut Butter Mug Cake is a simple cake that takes hardly 5 minutes to cook and enjoy.

Preparation Time: 3 minutes

Cook Time : 70 seconds

Serves : 1

Ingredients:

Brown Sugar : 2 1/2 tablespoons

Vegetable oil : 1 1/2 tablespoons

Egg white : 1

Peanut butter : 2 1/2 tablespoons

All purpose flour : 3 tablespoons

Baking powder : 1/4 teaspoon

Chocolate chips : 1 tablespoon

Instructions:

Add sugar, oil, egg white in a mug and whisk well.

Add peanut butter and whisk well.

Add flour, baking powder, chocolate chips and mix to combine.

Cook in a microwave on high for 70 seconds.

Veggie Noodle Salad

Zoodles is very famous where zucchini is made into noodles. Why just zucchini and leave other veggies so, I went and made noodle salad using a lot of vegetables. The color and texture was just amazing.

Preparation Time: 15 minutes

Serves : 3-4

Ingredients:

Zucchini : 2

Yellow squash : 1

Beetroot : 2 medium

Carrot : 1 large

Cabbage : 1/2 cup sliced thinly

Bell peppers : 1 cup julienned (red, yellow and green)

Lemon juice: 2 tablespoons

Salt and Pepper

Instructions:

Using a zoodle maker, make noodles of zucchini, squash, beetroot and carrot.

Add the veggie noodles, cabbage, bell peppers, lemon juice, salt and pepper in a bowl and toss well to coat. Let the salad rest for 15 minutes in the refrigerator so the flavors are soaked in.

Serve chilled.

Chocolate Banana Bread

Banana Bread is a kids favorite at home and once I added chocolate to their favorite bread, they loved it. The flavors go really well. Banana Nut Bread that I make has loads of walnuts whereas Chocolate Banana has loads of chocolate chips and cocoa.

Preparation Time : 15 minutes

Bake time : 60 minutes

Makes : 1 loaf

Ingredients:

All purpose flour : 1 1/2 cups

Cocoa Powder : 1/2 cup

Baking powder : 1/2 teaspoon

Baking soda : 1 teaspoon

Butter : 1 stick/ 1/2 cup

Granulated sugar : 1/2 cup

Brown sugar : 1/4 cup

Eggs : 2 large

Ripe Bananas : 3 medium mashed

Chocolate chips : 1/2 cup

Instructions:

Preheat the oven to 350 degrees F.

In a medium size bowl, cream butter and sugars until they turn light and fluffy.

Add eggs, banana and stir to combine.

Add flour, cocoa powder, baking powder, baking soda, chocolate chips and stir to combine. Do not over mix.

Grease and flour a 9×5 loaf tin, add the batter and bake for 55-60 minutes or until a toothpick comes out clean.

Let the bread rest for 10 minutes in the tin before transferring it onto a cooling rack.
