This Paratha is flaky and will melt in your mouth. Serve it with your choice of gravy. It’s a perfect dish for any meal. I already posted Kerala Parotta/Malabar Parotta which is a similar dish but needs longer resting time. This paratha is ready in 30 minutes.

I served it with Chicken Salna.

Preparation Time : 10 minutes

Resting Time : 20 minutes

Makes : 7 Parathas


Maida : 4 1/2 cups

Sooji : 1/3 cup

Powdered sugar : 2 tablespoons

Salt : 3/4 tablespoon

Ghee : 3 tablespoons + 2 tablespoons

Warm Water : 1 1/2 cups


In a large bowl, add all ingredients and knead well to form a soft dough. Cover it and let it rest for 20 minutes.

Add the remaining 2 tablespoons of ghee and knead well again. Make 9 equal size balls.

On a floured surface, take one ball and roll it into a thin chapati. Cut into small strips as shown in the picture.

Smear some ghee and some flour, pull the pieces together, stretch them and roll into a disc. Roll it again into paratha.

Heat a tava, fry the paratha on both sides adding some ghee.

Repeat the same process with rest of the dough.

Serve hot with some salna or gravy.
