Ginger Chicken is a delicious Indo Chinese Style Chicken gravy. The dish is flavoured with fresh ginger and cooked along with chicken and sauces. It goes well with rice or noodles. This is a quick and easy dish that can be done in less than 30 minutes.

Preparation Time: 10 minutes

Cook Time : 20 minutes

Serves : 2-3

Ingredients:

Chicken Thighs or breast : 500 grams cut into 1 inch pieces

Ginger : 6 slices cut in 1/4 inch thick

Garlic : 3 cloves sliced

Onions : 1 large diced (use red or yellow)

Chicken stock : 1 1/2 cups

Light brown sugar or honey : 1 teaspoon

Soy sauce : 2 tablespoons

Dark soy sauce : 1 teaspoon

Red chilli sauce: 2 tablespoons

White Pepper : 1/2 teaspoon ( you can use black pepper)

Oyster sauce: 2 teaspoons (optional)

Slurry : 1 tablespoon corn flour + 1 tablespoon water

Scallions : 1 diced

Salt to taste

Method:

Heat oil in a large pan until it starts smoking and add ginger pieces and fry them for 30 seconds.

Add Chicken and saute it for 3 minutes. Add onion, garlic and saute for 30 seconds.

Add chicken stock, brown sugar, soy sauces, red chilli sauce, pepper, oyster sauce, mix well, close lid and cook for 5 minutes on high heat.

Remove the lid and cook for another 5 minutes. Add the scallion, slurry and stir well to combine. Cook for 1 minute and turn off the stove.

Serve hot with some rice or noodles.
