Noodle Salad has the goodness of veggies that too a lot of them. The Asian Peanut Sauce is mildly sweet and spicy with a lot of flavour. It’s a healthy salad and will be a crowd pleaser, Even kids will love it. A nice way to feed veggies to kids and adults.

Preparation Time: 10 minutes

Cook Time : 5-6 minutes

Serves : 4


Cabbage : 1 cup shredded

Red cabbage : 1 cup shredded

Cilantro/coriander leaves : 1/4 cup chopped

Peanuts: 1/4 cup broken into pieces

Scallions : 1/4 cup chopped

Noodles : 200 grams


Peanut butter : 1/4 cup

Red chilli powder: 1/2 teaspoon

Salt : 1/2 teaspoon

Fish sauce: 1 tablespoon

Water : 1/2 cup

Lime juice: 1 tablespoon

Sesame oil : 1 tablespoon

Soy sauce: 1 tablespoon

Garlic : 1 teaspoon minced

Ginger : 2 teaspoons minced


In a large pot, boil water, add noodles and cook according to package instructions. Drain water, add 1 teaspoon of sesame oil and keep aside.

Add all the ingredients listed under sauce in a blender jar and pulse it to make a smooth sauce.

In a large bowl, add the veggies, cooked noodles and toss. Add the sauce and toss well to coat.

Serve immediately.
