Banana Bread is a very famous fruit bread. Adding nuts especially walnuts gives a nice nutty flavour to the bread. It works well for breakfast or as a snack.

I’ve been making Banana bread for a long time but it needed some tweaking to balance the banana flavour and the nut flavour. Finally this recipe is loved by the kids and now I make it often.

This is a simple recipe which doesn’t even require a mixer. A fork and spatula does the work.

Preparation Time: 10 minutes

Bake Time : 50 minutes

Serves : 4

Ingredients:

Ripe Bananas : 3

Melted unsalted butter: 5 tablespoons

Baking soda: 1 teaspoon

Salt : A pinch

Sugar : 3/4 cup

Egg: 1 large

Vanilla extract: 1 teaspoon. (If you want to serve it with coffee, add 1/2 teaspoon of Coffee extract)

Nutmeg: 1/4 teaspoon

All purpose flour: 1 1/2 cups

Chopped Walnuts : 1/2 cup

Method:

Preheat the oven to 350 degrees Fahrenheit.

In a bowl, mash the bananas with a fork until its smooth. Add melted butter to the bananas and mix well.

Beat the egg in a small bowl. Add the rest of the ingredients except walnuts and mix well.  Once the batter is ready, add the nuts and give it a stir.

Grease or place a parchment paper in the bread pan and pour in the batter.

Bake the bread for 50-55 minutes or until a toothpick comes out clean from middle of the bread.

Take the bread from the oven, cool it for 10 minutes and slice into pieces with a bread knife.

Serve hot with coffee or cold as is.
