Cajun Chicken can be cooked on the stove or in a slow cooker. This is a slow cooker version which is cooked for 3-4 hours on high or 6-7 hours on low.

A lot of veggies and chicken with no oil again is a healthy dish, served over rice.
Preparation Time: 10 minutes 
Cook Time: 3-4 hours on high or 6-7 hours on low.
Serves: 3-4
Ingredients:
Chicken Thighs: 4 pieces skinless and cut into large pieces 
Onion : 1 large diced 
Capsicum/ green pepper: 1 large diced 
Tomato: 2 diced 
Garlic: 3 cloves crushed 
Cajun seasoning: 1/2 cup
Red chili powder or cayenne: 1 teaspoon 
Salt to taste 
Chicken broth: 2 cups 
Method:
Mix all ingredients in a slow cooker and set it for 6-7 hours on low or 3-4 hours on high. Stir once or twice in between.
Serve hot over white rice.
